Capturing the Essence of Herbs | Dr. Jim Dukes Green Farmacy | Sunday, 08. September 2019

Once you’ve grown the herbs—what do you do with them? Culinary herbalist and author Susan Belsinger will discuss the fragrance and flavor of herbs, and will explain how and when to harvest herbs for optimum flavor, how to efficiently dry herbs, and the best ways to preserve them. This program concentrates on the culinary herbs and how to capture their essence in everything from making aromatic herbal pastes and herb butters to syrups and vinegars; along with recommendations for the best vinegars and oils to use.
Susan will demonstrate how to prepare some simple recipes featured in her new book Grow Your Own Herbs: The 40 Best Culinary Varieties for Home Gardens, co-authored with Arthur O. Tucker (Timber Press, Spring 2019). You will get to sample some of these herbal recipes and come away inspired to cultivate, create and use herbs in your everyday life. Each student will take home an herbal vinegar and syrup that they create with herbs from the Green Farmacy Garden.
